Ingredients

2 cups Spring Mix Greens
½ cup cucumber (sliced thin)
1 cup cherry tomatoes (cut in half)
¼ red onion (sliced thin)
⅛ cup grated carrot
2 medium chicken breasts (sliced in half or pounded flat)
1 tbsp olive oil
1 clove of garlic (crushed or minced)
Salt and black pepper (to taste)
Instructions
Season chicken breasts with salt, black pepper, and fresh garlic. Set aside in a Ziplock bag.
Heat 1 tbsp of olive oil in a large grill pan on medium heat. Cook chicken breasts on each side for 5-7 minutes until golden brown grill marks are present. Set aside and allow to cool before slicing or chopping.
Combine spring mix greens, cucumber, cherry tomatoes, red onion, and carrots into a large bowl and toss lightly until all ingredients are mixed.
Top with grilled chicken and serve with choice of dressing.
