Garlicky Butter Lemon Salmon with Asparagus

Ingredients

  • 1.5 lbs of salmon (cut into 4 fillets)

  • 1 lb of asparagus spears

  • ½ cup of butter (melted)

  • 3 garlic cloves (crushed or minced)

  • 1 tbsp fresh parsley (minced)

  • 1 tsp onion powder

  • 1 tsp salt

  • ½ tsp black pepper

  • 4 slices of lemon (cut in half)


Instructions

  1. Preheat your oven to 450 degrees. I personally like to line my baking pan with aluminum foil for easy cleanup or use my Pyrex easy-grip casserole dish.

  2. Whisk together the melted butter, fresh parsley, garlic, and onion powder. Drizzle ¼ of the mixture on the baking pan and reserve the rest.

  3. Lay the salmon fillets in the center of the baking pan, while leaving space between each fillet. 

  4. Arrange the asparagus spears around the top and bottom of the baking pan.

  5. Drizzle remaining mixture over the salmon fillets and asparagus spears.

  6. Sprinkle with salt and black pepper.

  7. Place lemon slices on salmon fillets (2 halves for each fillet).

  8. Bake for 12-15 minutes or until the salmon flakes with a fork and is visibly opaque throughout.

  9. Serve and enjoy immediately or store in the fridge for up to 3 days.
