Chicken Bacon and Ranch Salad

Did you know that salad could be considered as comfort food? Crisp mixed greens, cherry tomatoes, cucumbers, sliced red onions, grated carrots, savory chicken, flavor-packed bacon, and creamy ranch dressing combine to make this meal favorite.

  • 2 cups Spring Mix Greens

  • ½ cup cucumber (sliced thin)

  • 1 cup cherry tomatoes (cut in half)

  • ¼ red onion (sliced thin)

  • ⅛ cup grated carrot

  • 2 medium chicken breasts (sliced in half or pounded flat)

  • 1 tbsp olive oil

  • 1 clove of garlic (crushed or minced)

  • ¼ cup bacon bits

  • 4 tbsp Ranch Dressing

  • Salt and black pepper (to taste)

  1. Season chicken breasts with salt, black pepper, and fresh garlic. Set aside in a Ziploc bag.

  2. Heat 1 tbsp of olive oil in a grill pan on medium heat. Cook chicken breasts on each side for 5-7 minutes until golden brown grill marks are present. Set aside and allow to cool before slicing or chopping.

  3. Add bacon bits to the pan and sauté little until warmed. Set aside. (You can choose to make your own bacon bits by lightly cooking 2 slices of bacon and cutting them up into bits.)

  4. Combine spring mix greens, cucumber, cherry tomatoes, red onion, and carrots into a large bowl and toss lightly until all ingredients are mixed.

  5. Top salad with grilled chicken, ranch dressing and bacon bits in that order. Enjoy!

Here are some extra tips to help you modify this salad to your liking:

  • Add some grated sharp cheddar to enhance the flavor.

  • Put all ingredients into a bowl and toss the salad until the dressing is coating most of the ingredients.
