2 cups Spring Mix Greens
½ cup cucumber (sliced thin)
1 cup cherry tomatoes (cut in half)
¼ red onion (sliced thin)
⅛ cup grated carrot
¼ cup of Feta Cheese (crumbled or cubed)
1 pound large shrimp (deshelled and deveined)
1 tbsp olive oil
1 clove of garlic (crushed or minced)
Salt and black pepper (to taste)
Season shrimp with salt, black pepper, and fresh garlic. Set aside in a Ziplock bag.
Combine spring mix greens, cucumber, cherry tomatoes, red onion, and carrots into a large bowl and toss lightly until all ingredients are mixed.
Add 4 tbsp of buffalo sauce to shrimp and toss to coat completely.
Top salad with buffalo shrimp and feta cheese. Serve with choice of dressing.
