Instructions to Prepare Cauliflower

  1. Preheat your oven to 375 degrees.

  2. Cut the stalk end off the cauliflower so that the head is able to rest flat on a large baking sheet.

  3. Brush 2 tablespoons of olive oil over the cauliflower head and sprinkle salt and pepper to taste.

  4. Roast cauliflower in the oven for 30 minutes or until the outside starts to brown.

  5. Transfer cauliflower to a cutting board and allow it to cool.

  6. Once the cauliflower is cool to the touch, cut or break it into small florets. (You can do these first six steps in advance and store in the fridge until you are ready to use it. You may need to sauté them a little longer if refrigerated.)


Instructions to Prepare Buffalo Sauce

  1. In a medium saucepan, over moderate heat, bring the hot sauce and Sriracha sauce to a boil.

  2. Reduce the heat to a simmer and slowly stir in butter pieces until completely mixed for about 5 minutes. Remove the mixture from the heat and allow it to cool (this sauce can also be prepared in advance and stored in an airtight container for 3 days. Instructions to Make Cauliflower Bites

  1. In a large and deep sauté pan, warm the remaining olive oil.

  2. Add the cauliflower florets and sauté them for about 5 minutes.

  3. Add enough of the buffalo sauce to coat the cauliflower, and continue to sauté until both sauce and cauliflower are hot.

  4. Transfer the cauliflower to a platter, then serve with celery sticks and blue cheese dressing on the side. Enjoy immediately.
