I love all things egg and all things avocado! They each offer amazing heart-healthy benefits loaded with healthy fats, but when they are paired together… perfection!

  • 2 cups Spring Mix Greens

  • ½ cup cucumber (sliced thin)

  • 1 cup cherry tomatoes (cut in half)

  • ¼ red onion (sliced thin)

  • ⅛ cup grated carrot

  • ¼ cup of Feta Cheese (crumbled or cubed)

  • 2 hard-boiled eggs (chopped) 

  • 1 medium avocado (chopped)

  • Salt and black pepper (to taste)


  1. Combine spring mix greens, cucumber, cherry tomatoes, red onion, and carrots into a large bowl and toss lightly until all ingredients are mixed.

  2. Top salad with chopped egg and avocado, then sprinkle feta cheese. Serve with choice of dressing and enjoy!
